Stuffed Peppers
Yep, there's more of the crunkin' chipotle chickpea chili and corn caserole. Stuffed peppers! I mixed some rice in with the chili, then layered the chili and corn caserole in the peppers.
Wow you really are a professional recipe tester, Jenn! You show how versatile they can be and of course how delicious they are! I am totally impressed!

There's tofutti cream cheese in the corn casserole. The recipe will be in Bianca's upcoming cookbook. It's totally rad.
