Potato soup pancakes with tempeh bacon

When I was a kid we used to have leftover thanksgiving gravy over waffles for dinner. In Tara's family they have potato soup with waffles. Well I've got Bianca's pancakes and potato soup and it's like the 2 were made to be together. I ate this for brunch, with tempeh bacon but it's definitely one of those any meal combinations. Weird, yes. Totally awesome, heck yeah!

this is so funky haha but i love it!!

as soon as you mentioned muffins, jen, i wanted to cry!! i need to make some again. i'm not doing 100% raw, probably about 90% (as i scoop up some hummus with a broccoli floret).

i'm so emotional today for some reason. probably pms, damnit.

So not weird...I think sometimes soups can be passed off as gravy and have done this too;)

Have a good one!

You reminded me of when I was a kid and I used to have curry on toast, and it was always sooo delicious the next day. Hugs!

Wow! I would never ever have thought to have potato soup over waffles... I love them both separately, but together never crossed my mind. I will definitely give it a shot - I have a potato soup and a couple of waffles leftover in the fridge, so here goes....

Damn, I would never have thought of that. But it sounds good. I'll have to give that a try. I have a bad experience mixing unexpected foods this weekend (tempeh bacon, peanut butter, and bananas on a sandwich...it was icky). But this sounds like a surprisingly good combo.
